Weddings , weddings , Weddings!

It may only be April, but there are tons of weddings coming up this wedding season! I got married three years ago (March 4, 2011) and crazy enough it never crossed my mine to get myself wedding ready. I was already in a relationship, engaged and about to be married, who did I have to  impress?

ME! I needed to impress myself. I regret not getting wedding ready. Although my husband would NEVER tell me I need to lose weight, I wanted to look good for him. I wanted to be a "sexy wife". To make myself more comfortable with ME!

My husband and I actually had TWO weddings. I didn't get wedding ready for EITHER!!

Why do you care? I don't want you to make the same mistake. When I look back at our wedding pictures you know what I see? I see "before" pictures.  I see who I used to be. Don't get me wrong, I absolutely ADORE being married. I have come so far from the girl in these pictures...

See what I mean? These pictures would be SO much cuter without the "bat wings"  and without the back fat...

I did get my dress preserved, but I decided the better use for it than sitting in a box was to wear it again! SO I tried it back on.. No sucking in , shuffling my skin around this time. WHAT A RELIEF!

FAIL!

Hey!
Do you remember me? Wow am I ever bad at blogging.... I NEED to start making more time to blog.
What types of things would you like to see come from this blog?

So whats new?
- I'm STILL in school (and battling Senioritis ...)
- I have CREATED and started a HYBRID of P90X3 and the 21 Day Fix. I am absolutely LOVING it. I conveniently picked programs that I knew gave people wonderful results but were still only 30 minutes!
- I  created a logo for Coffee with Kate (what the heck is Coffee with Kate?) . Be on the lookout for the logo everywhere (I may or may not have already got a mug with it on it).
What do you think?!

I am going to be getting more mugs to give away with this logo on them! Maybe I will create an only Blog/YouTube give away!


OH- Have you liked my like page ?  Be sure to do that! Facebook is the best way to get a hold of me! I would LOVE to be "friends" with you!

HUGE opportunity!

There is HUGE NEWS over here on my end of things. I'm stepping WAY OUT of my comfort zone and I'm HOSTING a webinar tonight!! It would me SO MUCH if you came and joined me. I LOVE my job and I'm so excited to share this wonderful opportunity with people!

New Recipe: Chicken Kiev

I have always LOVED Chicken Kiev. The problem being, it is loaded (literally) with butter. I have been looking into recreating this recipe for a while. So, without further ado, here it is!

Chicken Kiev

Ingredients


  • Chicken Breasts
  • Coconut oil
  • Thyme
  • Butter (optional)
  • Whole Wheat Crackers (crushed up)
  • 1 egg
  • flour
  • Tooth picks

STEPS
1. Take your chicken breast and pound it out flat
2. Scrap out some coconut oil and put it in the middle of the chicken breast
3. Sprinkle on some thyme (& salt and pepper if desired)
4. Begin to bring the sides (the longest ones) into the middle. You will need them to over lap. 
5.Place a tooth pick into the chicken where the sides are over lapping. Bring in the bottom and top so you can't see the stuff inside. Again, place tooth picks into the chicken to hold it shut

6. Beat the egg in a dish. Dunk the chicken into the egg and then into the flour
7. Place the chicken back into the egg then into the crushed up crackers


8. Place the chicken onto a cookie sheet. Place the side where the edges are folded in down on the cookie sheet (Do you know what I'm talking about? So the pan kind of holds the edges down, ya know? This is awkward....)
9. Bake in a 400* F oven until golden brown (until the chicken is no longer pink inside)
10. ENJOY! I paired mine with potatoes & green beans :)

P.S. Don't forget to take out the tooth picks!

New Years....

The new year lends itself to being a time of new goals & dreams. Honestly, EVERY DAY is a time to start over fresh and to refocus your thinking. Just as many people do, I spent time reflecting on what I did last year and thought about where I wanted to put my time and energy in this year in order to help more people and to make myself happy. I've compiled some goals that WILL happen. I recently sent out a newsletter to my customers and laid out  a way for them to make goals. One of the main things I stressed was that the goals need to be written in present tense.So, here are my goals for 2014(in no particular order). PLEASE keep me accountable!

  • I am at my goal weight
  • I have helped 100 people
  • I attended Summit
  • I am a 2 star diamond coach
  • I have a 'healthy' savings account
  • I have started a house fund
  • I took one day a week to be technology free

Notice how I wrote them as if I already achieved them? It's a psychology trick to get yourself to have the gratification of already having done it. This makes you want to do achieve these goals more :)

What are your 2014 goals? I would LOVE to know! 

P.S. it is best to quantify your goals (be as specific as possible....). I have a goal weight in mind, and I would write the exact number down so it is clear cut if I achieved it or not. There is no gray area.

I finally did it...

I got up the nerve to try on a bikini. The last time I had one on was this March (see below) when I was taking my "before" pictures when I started Insanity (and only lasted two weeks...) { My transformation video is here https://www.youtube.com/watch?v=ETb4OXAebUg }

I am so thankful that I didn't see this body starring back at me in the mirror today. WELL... Are you ready to see it ?! Okay, good!
Well, what do you think? Oh, you want a comparison picture, as if the differences aren't screaming at you?
I won't argue... 
Keep in mind, the picture on the left IS from March, but I didn't take initiative to change until June. PLEASE don't make that mistake. I could've been down more than 35 pounds had I started in January. You will LOVE having self confidence!
