I finally did it...

I got up the nerve to try on a bikini. The last time I had one on was this March (see below) when I was taking my "before" pictures when I started Insanity (and only lasted two weeks...) { My transformation video is here https://www.youtube.com/watch?v=ETb4OXAebUg }

I am so thankful that I didn't see this body starring back at me in the mirror today. WELL... Are you ready to see it ?! Okay, good!
Well, what do you think? Oh, you want a comparison picture, as if the differences aren't screaming at you?
I won't argue... 
Keep in mind, the picture on the left IS from March, but I didn't take initiative to change until June. PLEASE don't make that mistake. I could've been down more than 35 pounds had I started in January. You will LOVE having self confidence!

The results are in....

I tallied up all of your votes on what challenge that I should host next.. The winner was..... CLEAN EATING. I decided that I would make this challenge run from December 26-30. It's right between Christmas and New Years and it's the PERFECT time to jump start your New Year's Resolution .

Fitness & Weightloss Tips for Starters

When starting my fitness and weight loss journey way back when (June 2013) I really had no clue where to start. I had a whole slew of people that I watched on YouTube who were getting AMAZING results. I would attempt to start a program (Jillian Michaels, C25K, Weight Watchers) and I would end up failing. I didn't have the motivation or drive to continue. It was too hard. I was done trying. Eventually I got so fed up with people getting results and I wasn't. I began to ask questions. How where these people getting results? Once I found out how, I put them to the test. And you know what? BOOM I got results! I've complied my findings below.


Beginner's Guide to Weight Loss (just in time for your New Years Resolution)




1.  Journal EVERYTHING you eat. Every lick, bite and taste. Write it ALL down.
I got a composition notebook like this and carry it around with me to write my food intake down. To start, keep track of approximates of how much food you ate. After a week of writing down your food, actually MEASURE it out and write it down. There is a nifty app called ' My Fitness Pal' that you can track your food on too. I know that I have MUCH MORE SUCCESS with the paper and pen journaling personally. Figure out what works for you!


 2. Avoid eating after dinner
I STILL have trouble with this one. It's a tough habit to break. It may be helpful to write down TIMES in your food journal so you can track when you are eating. Perhaps eating more through out the day may help. It's a horrible habit that needs to be broken! 

 3.Take Measurements BEYOND your weight
I know that it is hard NOT to focus on your weight. Especially after NOT having a scale for a year and a half and gaining 40 pounds. It's important to know that you can lose almost no weight but lose tons of inches off of your body. This is EXACTLY what happened to me after 30 days of INSANITY . I dropped only 0.4 pounds , but I lost 7 inches!! There are various ways to take measurements, but make sure you take your measurements the same way each time you take them. 


4. Find an accountability partner



This is key to your success. Have people you HAVE TO check in with daily AND weekly. I found my accountability though a Challenge Group! I HAD to post what workouts I did along with rate my nutrition. Once I started this challenge group, I started seeing results. (P.S. I have a challenge group starting January 6th. IF you want more information, fill out this simple form!)

5.Set SMALL, REASONABLE goals.
 


If you only focus on your ULTIMATE goal, it's so easy to get discouraged. Here is my motivation WALL! The post it notes count down until I'm at my goal weight. I focus on one post it note at a time. I know that it's not healthy to lose more than 2 pounds a week, so I don't set my goal for more than that. I strongly suggest you make something like this. It's VERY rewarding to get to cross off , or take off the post it notes when you have gone down in weight. 
*** Please NOTE: as mentioned before, it's not all about how much you weigh. 5 pounds of muscle takes up the same space as 1 pound of fat. It's important to go off of how you FEEL and what you can now accomplish because of your new lifestyle (may it be that you can go longer without a break during your workouts, or that your pants aren't as tight any more). Have your goals VISIBLE!!

The New Year is quickly approaching

Hey guys!
 I know that I haven't been on recently, but I'm always active over on my Facebook like page here . I've been extremely busy these last few months, but that doesn't mean I haven't been constant with my new lifestyle. I'm currently doing the Ultimate Reset ! I've lost over 10 pounds in the first two weeks! It's amazing what REAL FOOD will do for you ! I've decided that I'm going to OWN 2014. NOW is the time to get amped up and to have my goals set.

So, I though it would be fun for us to go through this journey together. Only 8% of people who make New Years Resolutions actually stay true to them (I know that I never did). Mexican Casserole

I was scrolling through Pinterest (no surprise, right...?) the other day and I came across one of my favorite blogs, Undressed Skeleton. I saw there was a new recipe and it looked too good not to try!
I got MANY requests for the recipe, so I figured I would put it up here. I adapted it a bit.                               Mexican Casserole

Ingredients 
1- Extra Large Spaghetti Squash
4 TBSP Canned Green Chilies (this was half of my small can)
1 can Petite Diced Tomatoes, Zesty JalapeƱos 
1/2 can Black Beans, look for low sodium (rinsed and drained)
1 cup Mexican style shredded cheese
1 tsp Garlic Powder
1 tsp Ground Cumin
1/4 tsp Black Pepper 
1 pound ground turkey

Steps

  1. Cut Spaghetti Squash in half the long way, scoop out all of the seeds and guts (you can save the seeds and roast them like you roast pumpkin seeds

2. Lay squash open side down on a shallow pan that has the bottom covered with water

3. Cook squash between 375 and 400 degrees. The time varies on the size of your squash. Check it after 20 minutes. You should be able to stick a fork into the skin EASILY .
4. While the squash is cooking, brown the ground turkey in a skillet
5. Mix all of the ingredients in a bowl ( without the spaghetti squash) only using 1/2 of the cheese
6. Put mixture into a greased baking pan and bake with spaghetti squash until bubbly or until squash is done- whichever comes first
7. When squash is done, take a fork and scrap the inside of the squash (it should look like spaghetti)
8. Put this spaghetti squash into the pan with the mixture and stir it around.
9. Sprinkle the remaining cheese on top and put back in the oven on broil until the cheese on top is melted

10. ENJOY! You can choose to eat it with a fork or with tortilla chips!

Insanity Results

Sorry for the neglect I gave you! It's been extremely busy over on this side of things. My husband and I got a new puppy! Her name is Roosevelt.




I know that some of you have been waiting to see my Insanity results. I see no need in making you wait...

Keep in mind that I am NOT any wheres near done with bettering myself! I'm currently doing Turbo Fire and LOVING it. Of course I'm still drinking Shakeology. After results like this, why would I stop!?
The far left is from March, around St. Patrick's day; the next is from the beginning of June, then the beginning of July and the far right is beginning of August.

Pin Win or Fail #2

I was browsing Pinterest (as I usually do) looking for something to do with the two chicken breasts that were thawing in my refridgerator. I came across this pin for melt in your mouth chicken breast. Although the link doesn't bring you to a real blog, I took the instructions that were the comment of the pin and decided to give it a try.


"So much better than fried!!! Melt in Your Mouth Chicken Breast, 1/2 c Parmesan cheese,1 c Greek yogurt, 1 tsp garlic powder, 1 1/2 tsp seasoning salt 1/2 tsp pepper, spread mix over chicken breasts, bake at 375 45 mins " 

I grated my Parmesan cheese, mixed it in with my Greek yogurt, garlic SALT ( I was out of garlic powder- I used the amount for the garlic powder and left out the salt) and my pepper. Gave that a good mix and began to lather it onto my chicken breasts.
I popped them into a 400 degree oven and allowed the chicken to begin to cook. I had to leave for work, so my husband kept an eye on them and took them out when they were no longer pink inside. 

It may not look delicious, but looks can be decieving and in this case they are! This chicken has the right name by being called melt in your mouth chicken!

Where am I now?

As mentioned before, I have been in an accountability group since the beginning of June. I have been drinking Shakeology daily and following the Insanity calendar with my workouts. Granted, I haven't been perfect with my workouts or my food. I have pushed workouts to my rest day or I've done 2 workouts the next day so that I could get some extra sleep, lift weights with my husband, or do other physical things with my family. Some times I HATE having to wake up to do my workout. When this happens, I remind myself that the only person suffering is me! It's me versus the old me. With this being said, I decided to compile some before and current pictures.  Please keep in mind that I am NOT done with Insanity or the accountability group yet. I still have 11 workouts to do. One of which I am going to do when I am done with my post .
I started by posting this picture on my Facebook not expecting much of a response. Man was I surprised! Every time I opened Facebook I had MANY notifications and messages pertaining to the picture. It really hit the spot with many of my Facebook friends. I was getting requests to post more comparisons, so I did.






I am SO excited to see my results after finishing Insanity! I am LOVING what I am seeing! It's an indescribably feeling when someone reaches out to you to tell you that because of you they are starting to change their life for the better. I actually cried when someone did this to me! It feels awesome to inspire people!

Pin Win or Fail #1

I was searching Pinterest high and low for pins to help use up zucchini. I got a massive one at the public market last weekend. Along with that, my zucchinis in my garden are almost ready! YAY!
I found a pin for Cinnamon Zucchini Coffee Cake and I thought " hey, why not give it a try". Man am I ever glad that I did!
I followed the directions from the link about exactly as they are written except for 3/4 of my sugar was really stevia. The cake just got out of the oven and it smells heavenly. I couldn't resist so I dug in and it was DELICIOUS! I wasn't too sold on the idea of zucchini tasting like apples, but it is TRUE! I'm so thankful I found this recipe!

Easy Turkey Chili

      I recently have crafted a turkey chili recipe. I had no real idea what I was doing. I marched into Wegman's knowing that I needed ground turkey, tomatoes (the recipe I was going to use called for stewing tomatoes), black beans with chili seasoning and corn. I found the ground turkey with no problem. The trouble came when I went to look for the stewing tomatoes I couldn't find them originally, and when I did end up finding them SUGAR was the second ingredient. NO THANK YOU! I took a venture down the aisle a few steps and found these
I was beyond pleased to find no sugar added! 
I settled for some black beans because again I had no idea what I was doing now that I decided I wasn't going to use the recipe I originally was going to use. It wasn't until I walked down the taco aisle and saw this
`Yes I realize this has added sugar, but because of how low on the ingredients it was I decided to let it slide. I put the beans I originally had back and put these beans in my cart. 
I found no salt added corn to add to my chili as well (without a problem)

When I got home I couldn't resist starting to make the chili. I began by browning the turkey


While the turkey was browning I opened up the cans of corn, tomatoes and beans and dumped them into a pot.It should be noted that I drained the corn, but not the beans & tomatoes.

Once the turkey was browned I added that into the mix

and mixed all the ingredients together

Now I just covered the pot and let it simmer for 15- 20 minutes.
The tomatoes cook down and it becomes less liquid-y 
Spoon it into a bowl and enjoy (even add cheese if you wish).
This is so delicious, quick & easy !!

Foodie Favorites

As mentioned in my last post, I'm going to start doing posts about the healthy foods that I've been enjoying, discovering and learning more about. I will throw in a few tips that I've acquired too.

1. Coconut Oil : I have known for a while about coconut oil. I've used it many times when making Paleo Toast Crunch  . Coconut Oil is a solid at room temperature and it melts at different temperatures depending on what coconut oil you are using. It works wonderfully in the Paleo Toast Crunch to hold everything together. Someone recommended putting coconut oil on my air popped popcorn instead of butter. Let me tell you, it was heavenly. It is even HUSBAND APPROVED! After discovering this, I put it on my corn on the cob and potatoes instead of butter and it was equally as good. Soon I hope to healthify a favorite of mine, Chicken Kiev,  using coconut oil instead of butter. This is the one that I use

 2. Stevia : Have you heard of Truvia or Splenda? They are common sweeteners. Problem is they are composed of chemicals. Stevia is plant based, which is awesome. I have powdered stevia that I use just as I would use regular sugar. I put it in my steel cut oats and I put it in my coffee. When I want to add flavor to my coffee I use vanilla or peppermint stevia. There are many different flavors that NuNaturals carries of stevia. There is an unflavored Clear Stevia as well in case you want to add your own flavor. NuNaturals is my favorite brand of stevia because it doesn't leave a bitter after taste like many other stevias on the market.




3. Paper Straws: (I know they aren't 'food' but they help with food!) I get mine from Target. They make drinking all that water so much easier. I love drinking out of them. A down side though is if you wait too long, they do get soggy. Nothing a new straw or drinking the last bit without a straw won't help. Sometimes flipping the straw around helps too. There are other packs that have different colors too. They are usually kept near the party supplies.
4. Shakeology:  This can be as a snack or as a meal replacement. I have been loving it for breakfast to give me the energy to go run around with Kindergartners, First and Second graders early in the morning at camp.The days that I don't have it for breakfast I usually bring it for a quick and easy lunch or dinner. Some people prefer for their shakes to sit a while in the refrigerator before they drink it. I didn't notice much of a difference. Today I attempted to make my shake into pudding to eat for breakfast! It's so fun to play around with different proportions of ice and milk to make different consistencies. Make sure to click on the link to learn more about it! Initially it seemed really expensive to me, but it comes out to 4 dollars a day ( less than a trip to Starbucks or the drive thru and a whole lot healthier). I love all the health benefits that I get from Shakeology and I know that it has helped to curb my snacking and cravings. I have a hard time getting in all of my veggies, and thanks to Shakeology I know I am getting what my body needs. I currently have the Chocolate Shakeology, but there are many different flavors. Next month I am getting the BRAND NEW Vanilla! I will be sure to let you know how it is! Oh yea, and there are SO MANY different recipes to try with Shakeology so it doesn't get boring!

This is just a start to my food favorites! I will update more in another post so be looking out for it.

Fitness Fun #1

I have officially completed two weeks of Insanity! When I got the program for my birthday in March, my husband and I started doing Insanity together. We quickly couldn't find time to keep doing the program together due to college classes and work not lining up. The days he had class early, I didn't and the days I had class early he didn't.  Way back in March we made it through the first week and into a few days on the second week. I'm thrilled that I have came this far in the program!
Since joining this challenge group I have found that I have lost my excuses not to work out. I know that I need to and that I have to report back on what workout I did. Granted, I could just say that I did the workout when I really didn't, but who is that hurting? ME! It will show when my progression pictures aren't showing progress and my measurements aren't changing for the better. I have fell in love with the feeling after having a wonderful workout.
I've made it a game with myself when I'm working out to see how many calories I can burn during a certain move. It keeps me pushing harder when I feel like quitting. Most recently, my personal highest burn for a workout has been 524 calories!
What's something that keeps you motivated to working out? It's said that a habit is formed in 21 days. Well I'm 14 days down WOOOHOOO!
I have to admit that my eating hasn't been as on track as I would like it. I am drinking Shakeology every day which has all of my servings of fruits & veggies in it. I wouldn't have guessed that it tastes as good as it actual does because it is so healthy. My favorite recipe so far is 1 scoop Shakeology, 1 cup Almond Milk , 1/4 tsp of Mint Extract and Ice. A little water may need to be added as well depending on the amount of ice that was added and how thick you want it.

Text on Canvas Tutorial

This is the long awaited tutorial on one of the wedding gifts I gave my cousin whose wedding I was in last weekend.
First and foremost, the materials you will need are:
- a blank canvas  (I got mine from JoAnn Fabrics etc with a 40 % off coupon)
- an idea of the text you want to put on the canvas ( mine was a well known saying that pertains to the couple)
-  a computer & printer
- pencil
- acrylic paint (again from Jo Ann Fabrics with a coupon)
- paint brush (I used a foam one)
- Sharpie
After you have gathered your supplies, grab your canvas, paint brush and paint. Apply paint to your canvas. I just poured some paint on and brushed it smooth

Feel free to take more 'care' in making sure there are no streaks or paint brush marks. I enjoyed how mine looked because I felt as though it went with my theme (sailing- it kind of looked like water to me)


Remember to paint all four sides of the canvas too.  You can choose to paint it a different color , but I chose the easy route and just painted it the same color.
Set your canvas aside to dry.

Now open up Word on your computer.
Side Note: I previously downloaded 'fun' fonts from a website for free. The website I used for this was this one and I followed the directions to get the fonts downloaded to my computer.

Once your computer has Word open, type out the saying or words that you want to transfer onto the canvas. Along with this make sure you take time to choose your font and size you want. Keep in mind that you will need to be tracing and replicating the font so choose wisely.

Now print out your word document.
Cut out and lay each word on your canvas. Make changes if needed to font and size. Ensure that you like how the font looks on the canvas.

Next  I took each word at a time off to make sure I didn't mess up my placement of the words. I flipped the word over and began to color on the back with a pencil. There is no specific pattern that needs to be followed, just make sure there is graphite on the back side of the word (this is what is going to transfer to the canvas). Along with this, you will be able to see the font through the back of the paper so make sure that all of the places that the font is has graphite covering it.
**** I recommend doing each word one at a time. From this step until you trace it with Sharpie then begin here again with the next word****
Flip the word back over and put in the position that you had it originally. It doesn't have to be in the exact spot as before, but ensure that you like where it is place. Begin to trace the font with your pencil. You will need to push down more than usual when tracing the letters.
Once you are done tracing the word, move the paper. You should be left with something that looks like this. If  yours didn't come out as well as this try putting more graphite (coloring more) on the back side of the paper and pushing harder when you are tracing.
{The color looks weird due to the way I edited the picture to optimize the visibility of the pencil}
Grab your Sharpie and trace over the pencil marks that were left on your canvas. I put my typed word above where I was tracing so I could refer back to it if needed. Keep in mind that you can change the font how ever you want and that you don't have to be exact to still make this canvas look great. When you display this canvas or give it as a gift the person looking at it won't know what font you used to make it. 
Continue this with all of your words until you are done. Surprisingly, it doesn't take too long to do the tracing. Again, I found that it was easiest to do it one word at a time from coloring the back of the word to tracing it with the Sharpie. 
After I was done with the front, I wrote a nice note on the back explaining why I chose this quote to give as a wedding gift. I also decided to add their wedding date to the bottom so they can read the canvas and remember their wedding day when the going gets tough.
